Having been born and raised in Texas and Oklahoma, all I ever ate was Tex-Mex food. In 1994, I moved to NYC and was totally disenchanted with Mexican food options. It was not bad, but it sure was not Tex-Mex. So, in 2003 I opened LOBO in Brooklyn to satisfy the hankering most of us displaced Texans have for chili con queso, rich and spicy con carne sauce and the basic yet flavorful cheese enchiladas. I was lucky enough to have access to one the most famous Tex-Mex kitchens in Austin called Maudie's. My chef Leonel Ramos and I went to Austin to get training in their kitchens. I shopped around for some authentic Texas decor and the result is a fun, relaxed place to enjoy a fresh juice margarita with infused tequila and a plate of hot and spicy enchiladas with Tex-Mex con carne sauce.
