6 QUESTIONS: SACHIKO KONAMI Owner/Chef Any recommendations for sushi newbies? Try Carpaccio in ponzu sauce and California roll. What drink pairs best with sushi? Sake, especially Junmai. We also have sakes you won't find in other restaurants that pair well with our tapas. The secret to preparing sushi is? The rice. It's a complicated process; the ratio of sushi vinegar to water, the amount of time you steam, the texture. My taste is very traditional from Japan. How do you describe your menu? Traditional Japanese with a twist. We're not Asian fusion, but we like to experiment with traditional Japanese ingredients. What's your favorite dish? The Goma Dofu is actually a 1,000-year-old recipe from Kyoto, Japan. It's a handmade sesame tofu. Your most creative roll? The Wildfire Roll. It's a California roll with fresh jalapeno, spicy tuna on top and special sauce.
